Sunshine Valley Honey - Limited Harvest

A little piece of Toronto’s wild, captured in a jar.

Before it was known as Topham Park, this pocket of east Toronto was called Sunshine Valley.

It’s a name worth remembering—and the inspiration behind a honey that tells the story of this neighbourhood today.

Sunshine Valley Honey is harvested from our own backyard hives, where thousands of bees leave each morning to explore a surprisingly wild landscape.

Just a short flight away lies the Don Valley, with its ravines, flowering trees and natural spaces. Throughout the surrounding neighbourhoods are backyard gardens, community pollinator gardens and meadows being allowed to naturalize and regenerate—creating an ever-changing mosaic of forage for bees and other pollinators.

Our bees don’t know property lines.

They simply follow the bloom.

They move from garden to meadow, tree canopy to ravine, gathering tiny amounts of nectar from thousands upon thousands of flowers before carrying it home to the hive.

What they create is a remarkable expression of this particular corner of Toronto.

The flavour changes subtly from year to year because the landscape changes too. Different flowers flourish. Weather patterns shift. New pollinator habitat emerges. And the bees decide where the best nectar can be found.

We harvest only their surplus and bottle it in small batches, raw and unpasteurized, preserving the honey as close to the hive as possible.

This isn’t simply Toronto honey.

It’s honey with an address, a history and a landscape behind it.

And when this season’s harvest is gone, it can never be recreated exactly the same way again.
