A rare harvest from the wild edge of Canada’s largest urban national park.

There are honeys you can make every year—and then there are honeys you simply have to be lucky enough to capture.

Rouge Wild Basswood Honey is one of those harvests.

Collected by our bees foraging along the forests and wild spaces surrounding Rouge National Urban Park, this limited harvest came during a remarkable basswood bloom. For a brief window in early summer, mature basswood (linden) trees burst into thousands of tiny, nectar-rich blossoms—and when the weather, rainfall, temperature, bloom and strength of the colonies all align, the bees can bring in an extraordinary amount of basswood nectar.

That perfect alignment doesn’t happen every year.

Basswood blooms for only a short period, and its nectar flow can disappear almost as quickly as it begins. This season, our bees were in exactly the right place at exactly the right time, allowing us to harvest a honey dominated by this sought-after tree nectar.

The result is Rouge Wild Basswood Honey—light, aromatic and beautifully distinctive, with the delicate floral character and subtle fresh, almost mint-like finish for which basswood honey is prized.

We harvest it in small batches, raw and unpasteurized, allowing the character of the Rouge landscape to remain exactly as the bees created it.

And once this harvest is gone, it’s gone.

We can’t ask the basswoods to bloom longer.
We can’t ask the weather to repeat itself.
And we can’t promise the bees will give us another harvest like it next year.

That’s what makes it special.
