High above the ground in our Muskoka apiary, our bees forage across a landscape of forest, rock, wetlands and wild shoreline—collecting nectar from whatever the Muskoka wilderness offers them.

There is no single crop planted for these bees. No field directing where they should forage.

Instead, they follow the bloom.

From flowering forest trees to wildflowers, berry blossoms and the countless nectar sources tucked throughout the Muskoka landscape, the composition of this honey is determined entirely by place, season and the instincts of the bees themselves.

That means we can never recreate it.

Every season of Muskoka Forest Honey is a snapshot of that particular summer—the rainfall, the temperature, what bloomed, when it bloomed and where the bees chose to fly.

The result is a honey with depth, character and a flavour that belongs unmistakably to the landscape it came from.

Harvested in small quantities and kept raw and unpasteurized, we do as little as possible between hive and jar so the honey can tell its own story.

And because our Muskoka apiary is intentionally small, so is the harvest.

When this season’s jars are gone, there won’t be another batch quite like them.
